Speaker 1: in through his shop window and admire the pretty surroundings.

Speaker 1: Cam and Beer had always wanted to have his own

Speaker 1: cheese shop. It had been his dream since he was

Speaker 1: a little bear. From the first moment that he tasted cheese,

Speaker 1: he knew that he didn't want to taste anything else.

Speaker 1: He longed to share his passion for fromage with as

Speaker 1: many people as possible. Cammbert had had his from arjerie

Speaker 1: for over twenty years now, and not a day had

Speaker 1: gone by that he hadn't loved it. One morning, cam

Speaker 1: woke up with a spring in his step. He often did,

Speaker 1: but to day something felt different. He had a feeling

Speaker 1: it was going to be a very good day. He

Speaker 1: slipped on his favorite brown, yellow and red checkered waistcoat

Speaker 1: and his lucky beret. Then he combed his fur until

Speaker 1: not a hare was out of place, and placed his

Speaker 1: glasses on the bridge of his snout. He admired himself

Speaker 1: in the mirror and whispered, I look superb, even if

Speaker 1: journey from his home to his fromagerie to open up

Speaker 1: for the day. He made himself a coffee with cream,

Speaker 1: asked what cheese was his favorite, but he could never answer.

Speaker 1: He loved all cheese. For as long as he could remember,

Speaker 1: it was all that he ate. Whilst his fellow brothers

Speaker 1: and sisters had devoured hives of honey, juicy bundles of berries,

Speaker 1: heaps of cheese, but only the French kind, whether it

Speaker 1: was gooey brie, tasty grew yere, or his fragrant namesake Camembert.

Speaker 1: Cam loved every type of cheese, and he loved sharing

Speaker 1: his passion and knowledge with everyone else. Once his fromagerie

Speaker 1: doors were open, customers started flooding in to buy his

Speaker 1: cheese creations and relax in his beautiful shop. The sun

Speaker 1: was streaming in through the big windows, and Camembert sighed

Speaker 1: with satisfaction as he observed his happy customers and popped

Speaker 1: a chunk of goat cheese into his mouth. All of

Speaker 1: a sudden, the bell above the shop door jingled and

Speaker 1: a familiar face walked in. It was Bucky the Goat,

Speaker 1: delivering Cam's latest order of cheese. Cam rubbed his hands

Speaker 1: together with jubilation. He couldn't wait to see what selection

Speaker 1: of fromage Bucky had brought for him today. Bucky placed

Speaker 1: a large cardboard box on top of the glass cabinet

Speaker 1: and greeted Cam. Bonjieur, monsieur Camembert. Is it not a

Speaker 1: trebleau day? Bucky said. Cam had to agree it was

Speaker 1: a particularly lovely day. He leaned forward and took the box. Hmm,

Speaker 1: what do you have here for me today? Cam asked

Speaker 1: Bucky with intrigue as he opened it up with his paws.

Speaker 1: As soon as Cam lifted the lid on the box,

Speaker 1: the cheesy smell from within wafted out into the room.

Speaker 1: It all smelled delicious, and Cam licked his lips with longing.

Speaker 1: He had to remember that the cheese was for his customers,

Speaker 1: not for him to gobble up on his own, although

Speaker 1: he would certainly try a bite or two of each

Speaker 1: one just to make sure that it was good enough

Speaker 1: to serve. Bucky gave the names of the different cheeses

Speaker 1: of each one. However, the last cheese in the box

Speaker 1: was a new one that Cam hadn't seen before. Oh

Speaker 1: cheese with a hard orange exterior. Bucky answered, it is

Speaker 1: called Ettalki and it is made in the mountains. Cam

Speaker 1: was surprised. He'd never heard of a talkie cheese before.

Speaker 1: Cam thought he knew every type of cheese that came

Speaker 1: from France. The curious bear sla I sed off a

Speaker 1: segment of the talkie cheese and ate it. His eyes

Speaker 1: grew wide as the flavors burst all over his tongue.

Speaker 1: It tasted spectacular like earthy hazelnut, sweet caramel, then spicy pepper,

Speaker 1: all in one, with a velvety texture that melted in

Speaker 1: his mouth. Oh la, it is amazing, Cam cried, reaching

Speaker 1: tried it before? Bucky explained, Well, you see, the sheep

Speaker 1: who produced this cheese don't make it very often. They

Speaker 1: live up in the French Pyrenees Mountains and they prefer

Speaker 1: a quiet, relaxing life where they do very little work.

Speaker 1: But for a few months a year they create a

Speaker 1: batch of this cheese to share with the shepherds and

Speaker 1: local villages that surround their mountain. And I was lucky

Speaker 1: enough to get old of some. Cam was fascinated. There

Speaker 1: were sheep in the Pyrenees Mountains making cheese this delicious,

Speaker 1: how intriguing. Cam had never really thought much about where

Speaker 1: cheese came from. He had simply enjoyed eating it and

Speaker 1: selling it, and that was that. Now, however, he paused

Speaker 1: to wonder where did his cheeses come from. It seemed
00:11:47
Speaker 1: as though there was more for him to learn. After all,

Speaker 1: I did they give some to you, Cam asked Bucky.

Speaker 1: Bucky replied, I travel around collecting lots of different types

Speaker 1: of cheeses. I have been to Italy and Greece, Austria

Speaker 1: and Switzerland, and even as far as New Zealand to

Speaker 1: try out all the different cheeses and bring them back

Speaker 1: for my clients. There are so many types out there

Speaker 1: all over the world. Cam needed to sit down. He'd

Speaker 1: only ever thought that cheese was made in France, but

Speaker 1: now he was discovering that cheese was made all over

Speaker 1: the world. There must be so many that he hadn't

Speaker 1: yet tried. Calm suddenly felt a hunger in his belly

Speaker 1: and a drive in his heart to find out more.

Speaker 1: He wanted to try every cheese in the world, exactly

Speaker 1: where they came from. He couldn't stop thinking about the

Speaker 1: sheep who lived in the French mountains and made this

Speaker 1: Bucky drove his wagon through the towns, out into the countryside,

Speaker 1: the sheep lived. He had only been there twice before,

Speaker 1: but he remembered the dusty roads well, and his wagon

Speaker 1: jutted and shuddered as it clambered up the rocky mountain roads.

Speaker 1: Eventually they reached a mountain side patch of land that

Speaker 1: opened up into what appeared to be a little village.

Speaker 1: The ground was covered in lush grass perfect for grazing on,

Speaker 1: and there were several wooden huts with a large roaring

Speaker 1: fire in what looked like an iron pot in the

Speaker 1: middle of the village. Everywhere Cam looked there were mountain
00:14:55
Speaker 1: sheep relaxing, grazing, and chatting. One of the sheep recognized

Speaker 1: Bucky and crossed the village to meet him. Boissieu Bucky.

Speaker 1: The sheep smiled warmly back to Tuitt, did you sell

Speaker 1: out of a talkie? Fromage Ready? Bucky gushed about how

Speaker 1: popular their cheese had been and confessed that he was

Speaker 1: back for more. He had also brought his good friend

Speaker 1: Cam and Bear along for the ride. This time, Cam

Speaker 1: was eager to learn more about the sheep who made

Speaker 1: the cheese to relay to his customers back at his fromagerie.

Speaker 1: Boujeou waved Cam eagerly. Bojeur Monammy. The sheep waved back.

Speaker 1: The friendly sheep was called Agnes, and she was the

Speaker 1: perfect person to speak to about their fromage. It turned

Speaker 1: out that Agnes oversaw all the fromage creation here on

Speaker 1: the mountain. She offered to give them a little bit

Speaker 1: of a tour. She showed Cam and Bucky over to

Speaker 1: where they made their delectable at Talkie cheese. At the

Speaker 1: back of the village, there were several sheep, all working
00:16:14
Speaker 1: as a team to make the delicious fromage. There were
00:16:19
Speaker 1: a couple of sheep pouring out milk into massive bowls.

Speaker 1: Then other sheep stirred it over a fire to warm

Speaker 1: it up and make the cheese curdle and solidify. Then,

Speaker 1: once it was the perfect condition, a few sheep took

Speaker 1: the mixture out of the bowls and shaped it into

Speaker 1: round bundles, passing them to a couple of sheep who

Speaker 1: rubbed salt into the external orange brine that coated and
00:16:48
Speaker 1: covered the cheese. Finally, they stored away the balls of
00:16:54
Speaker 1: cheese in a cool, dark hut to leave to harden

Speaker 1: until they were to be eaten or sold. It was

Speaker 1: a slick, well oiled machine, and Calm was very impressed.

Speaker 1: It was clear that the Mountain sheep knew exactly what

Speaker 1: they were doing and had done this many times before.

Speaker 1: long relaxing break. It sounded nice to Cam. He barely

Speaker 1: out on a wooden board. Then she asked one of

Speaker 1: her friends to bring over a plate of figs, chunks

Speaker 1: fruit and figs, for perhaps Agnes was very hungry. Once

Speaker 1: Agnes had the plate of fruit, she began piling it

Speaker 1: up on top of the wedges of cheese. Cam frowned

Speaker 1: with confused Why was she pearing the fruit with the cheese.

Speaker 1: They would taste strange together. However, Agnes assured him that

Speaker 1: she knew what she was doing. Cheese was excellent when

Speaker 1: paired with other foods and flavors, she told him, especially

Speaker 1: pearings was prepared, she held out her hooves and announced,

Speaker 1: the fruit were irresistible. Cam had never thought to pare

Speaker 1: It's something totally new that I have in store. You

Speaker 1: small pieces and topped each one with a selection of jams, figs,

Speaker 1: at the beistro table. The mice dug in and chomped
